The Signature

The Gilded Risotto, infused with grade‑A Negin saffron.

Harvested by hand at the break of dawn in the high plateau of Khorasan, our saffron is bloomed in warm clarified butter before meeting the rice. A process that cannot be rushed, finished with a whisper of twenty‑four carat leaf.

Portrait of Chef Elias Thorne in the kitchen

Chapter IThe Philosopher

"We do not cook. We preserve the vibration of the ingredient."

Chef Elias Thorne spent a decade in the high plateaus of Khorasan learning the rhythm of the harvest — how the saffron opens only in the hour before sunrise, how patience is itself a spice. Today, he translates that silence into every plate at Saffron Table.
